Benifuuki is a tea variety characterised by a high content of methylated catechin (EGCG3) and is, among other uses, often consumed in Japan for allergies such as hay fever. The flavour depends greatly on the preparation and can range from subtly bitter to delicately astringent, with a floral aroma reminiscent of oolong tea, as the tea leaf is gently cold-fermented overnight.
