New favourite cookbook
I recently got the book and have now cooked from it almost every day, everything has turned out wonderfully and tasted great! You should have a certain "basic stock" of spices, these are not too exotic and readily available these days, but there are also tips and alternatives in advance.
The short introductory texts usually indicate whether ingredients can be substituted or whether there are soya-free or gluten-free variants. Vegetable varieties can often be varied or soya products can be replaced with vegetables. A large number of smaller dishes can be put together to create varied menus. Nevertheless, the dishes are suitable for everyday use and I have also prepared some of them in the evening after work, and many can be reheated the next day. The simple dishes in particular have turned out to be a flavour hit.
The recipes are easy to cook, whether simple or more elaborate.
The list of ingredients is in the order of the steps and in some cases already contains the basics such as "onion, chopped", so that the instructions are not too long or confusing. I don't have to ask myself at the first attempt whether, for example, the dough might not turn out after all, because the author already points out that it can lump at the beginning, but that this will disappear. The option of making your own yoghurt or chickpea tofu is also great. Richa Hingle has made a great effort to modify traditional Indian cuisine, which often contains dairy products, but still preserves them.
The cookery book is well thought out, clearly laid out and attractively designed. For me personally, it also contains the right amount of information about the ingredients, cooking methods, regional backgrounds and personal influences. I've tried several Indian cookery books before, but none have appealed to me so much, partly because many of them were too complicated or the ingredients were so exotic and not interchangeable. It's different here, I can cook a wonderful Indian meal with my leftover vegetables from the weekend, I have good instructions, but I can also be creative myself.
Conclusion: My new favourite cookbook!

The book arrived quickly and is clearly laid out with an extensive and clearly organised subject index. Recipes can be searched by ingredient and also by preparation method. Ingredients and preparation steps are clearly organised and described in a way that is easy to understand. All five dishes that I have cooked so far have been delicious and I am beginning to understand the specialities and principles of Indian cuisine in different regions. There are also extra explanations in a separate chapter. Tofu and tempeh, which I don't like at all unprocessed, are now so delicious that I find it easier to cook vegan food more often.
For a new edition, I would like to see the nutritional information for the dishes per portion (calories, carbohydrates, fat, protein, fibre)
