Darjeeling tea is especially mellow and is therefore regarded as one of the best teas in the world. Tea generally contains a number of valuable natural ingredients. For example tannin gives the tea its mildly tart taste.

This breaks the cell walls of the tea leaves, releasing the enzymes necessary for oxidation. The leaves thereby turn black as the oxidation intensifies, creating a full-bodied flavour with numerous nuances of taste.
